Ingredients
- 2 large ripe avocados: peeled and pitted
- 100 g (3.5 oz) dark chocolate (70% cocoa): chopped
- 3 tbsp unsweetened cocoa powder:
- 4 tbsp pure maple syrup (or honey):
- 2 tsp pure vanilla extract:
- Pinch of sea salt:
- 3 tbsp unsweetened almond milk (or milk of choice): more as needed
- 125 g (1 cup) fresh raspberries:
- 1 tbsp dark chocolate: shaved or finely chopped (optional)
- Fresh mint leaves: optional, for garnish
Instructions
- Melt Chocolate:
- Melt the dark chocolate in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth. Allow to cool slightly.
- Blend Mousse Base:
- In a food processor, combine avocados, melted chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until smooth and creamy, scraping down the sides as needed.
- Adjust Consistency:
- Add almond milk one tablespoon at a time and blend until you reach your desired mousse consistency.
- Sweeten to Taste:
- Taste and adjust sweetness by adding more maple syrup if needed.
- Chill:
- Spoon mousse evenly into 4 serving glasses or bowls. Cover and refrigerate at least 1 hour.
- Add Toppings:
- Before serving, top with fresh raspberries, shaved chocolate, and mint leaves if desired.
