01 - 1 sheet thawed puff pastry
02 - 7 oz Brie cheese, rind on, sliced

03 - 1/2 cup fresh pomegranate seeds
04 - 1/4 cup fresh parsley leaves
05 - 1/4 cup fresh rosemary sprigs

06 - 1 egg, beaten (for egg wash)
07 - 1 tbsp honey
08 - 1/4 cup chopped pecans or walnuts (optional)
09 - Freshly ground black pepper, to taste
# Method:
01 - Set oven temperature to 400°F and line a large baking sheet with parchment paper.
02 - Unroll the puff pastry sheet. Using a sharp knife, cut an 8-inch circle, then cut a 4-inch circle from the center to create a wreath shape.
03 - Distribute Brie slices evenly around the wreath base, leaving a small border around the edges.
04 - Sprinkle half of the pomegranate seeds and all chopped nuts over the Brie cheese.
05 - Fold the pastry edges over the filling and pinch gently to secure. Brush the surface with the beaten egg to promote browning.
06 - Place the wreath on the prepared baking sheet and bake for 15 minutes until the pastry is golden and puffed.
07 - Remove from oven, drizzle with honey, and season with freshly ground black pepper.
08 - Let cool slightly. Garnish with parsley, rosemary sprigs, and remaining pomegranate seeds. Serve warm or at room temperature.
