# Method:
01 - Set the oven temperature to 425°F. Line a baking sheet with parchment paper.
02 - Wash the delicata squash, trim the ends, and cut into ½-inch thick rings. Remove seeds from each ring with a spoon.
03 - In a large bowl, combine squash rings with olive oil, maple syrup, salt, pepper, and cinnamon until evenly coated.
04 - Place the coated squash rings in a single layer on the prepared baking sheet.
05 - Bake for 20 to 25 minutes, flipping the rings halfway through, until golden and tender.
06 - Transfer the baked rings to a serving platter immediately after baking, then sprinkle with chopped pistachios and parsley if desired. Serve warm.
