06 - 1/2 cup creamy peanut butter
07 - 1/3 cup honey or maple syrup
08 - 2 tablespoons coconut oil or unsalted butter
09 - 1 teaspoon vanilla extract

# Method:

01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy lifting.
02 - In a large mixing bowl, combine the rolled oats, ground flaxseed, chopped roasted peanuts, shredded coconut if using, and salt until evenly distributed.
03 - In a small saucepan over low heat, stir together the peanut butter, honey or maple syrup, and coconut oil or unsalted butter until fully melted and smooth. Remove from heat and stir in vanilla extract.
04 - Pour the melted wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
05 - Transfer mixture to the prepared baking pan. Use a spatula or clean hands to press mixture firmly and evenly into the pan.
06 - Bake for 18 to 20 minutes until edges turn lightly golden.
07 - Allow to cool completely in the pan on a wire rack. Once cooled, lift out using the parchment paper and cut into 16 squares.
