01 - 2 ripe mangoes, peeled and diced
02 - 1 cup ricotta cheese
03 - 1/2 cup heavy cream
04 - 2 tablespoons powdered sugar
05 - 1 teaspoon vanilla extract

07 - 2 tablespoons unsalted butter
08 - 1/4 cup heavy cream
09 - Pinch of sea salt

# Method:
01 - In a mixing bowl, combine ricotta cheese, heavy cream, powdered sugar, and vanilla extract. Whip using an electric mixer or whisk until smooth and creamy. Transfer the mixture to the refrigerator to chill.
02 - In a small saucepan over medium heat, stir granulated sugar constantly until fully dissolved and amber in color. Quickly add unsalted butter and stir until melted. Remove from heat and carefully whisk in heavy cream and a pinch of sea salt. Allow the caramel sauce to cool to room temperature.
03 - Dice the peeled mangoes into bite-sized pieces, reserving several pieces for garnish if desired.
04 - In four serving glasses, spoon a layer of ricotta mixture, add diced mango, and drizzle caramel sauce. Repeat the layering sequence, finishing with caramel sauce on top.
05 - Top each parfait with chopped pistachios and fresh mint leaves if using.
