→ Base
20 - 8 small corn or flour tortillas (soft taco size)

# Method:
01 - In a mixing bowl, thoroughly combine soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang. Add the sliced protein and toss to coat evenly. Allow to marinate for 15 to 20 minutes.
02 - Place cooked ube, sour cream or yogurt, lime juice, honey or maple syrup, and salt in a blender or food processor. Blend until completely smooth and vibrantly colored. Refrigerate until ready to serve.
03 - Heat a skillet or grill pan over medium-high. Add marinated protein and cook, turning occasionally, for 4 to 6 minutes until well-browned and cooked through. Remove from heat and set aside.
04 - Heat tortillas in a dry skillet or microwave in short intervals until soft and pliable. For bowls, fluff the cooked jasmine or sushi rice with a fork.
05 - To assemble tacos, spread ube crema on each tortilla, layer with cooked protein, then top with kimchi, shredded cabbage, sliced cucumber, jalapeño, cilantro, toasted sesame seeds, and pickled onions. For bowls, arrange rice as the base, add toppings, and drizzle with ube crema.
06 - Serve immediately, inviting guests to build tacos or bowls to their taste.
