01 - Combine hot brewed coffee and granulated sugar in a heatproof bowl, stirring until sugar is completely dissolved. Sprinkle the gelatin powder evenly over the coffee mixture, then whisk until the gelatin is fully dissolved and the mixture is smooth.
02 - Pour the coffee gelatin mixture into a small square or rectangular dish. Transfer to the refrigerator and chill for at least 2 hours, until fully set.
03 - Once set, remove the dish from the refrigerator. Using a sharp knife, cut the jelly into small cubes, approximately 1/2 inch each.
04 - Divide the coffee jelly cubes evenly between two tall glasses. Add ice cubes as desired.
05 - Pour 1/2 cup cold milk into each glass over the jelly cubes.
06 - Gently pour 1 shot of espresso or strong coffee over the milk in each glass. Sweeten with sugar according to your preference.
07 - Top each latte with whipped cream. Garnish with a dusting of cocoa powder or chocolate shavings if desired.
08 - Serve immediately with a long spoon and straw to enjoy both the jelly and latte components.
