# What you'll need:

01 - 1 cup all-purpose flour
02 - 1/2 cup light brown sugar, packed
03 - 1/2 cup unsalted butter, cold and cubed
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon fine sea salt

→ Coffee Bar Base

06 - 1 cup all-purpose flour
07 - 1/2 teaspoon baking powder
08 - 1/4 teaspoon fine sea salt
09 - 1/2 cup unsalted butter, softened
10 - 1/2 cup granulated sugar
11 - 1 large egg
12 - 1 teaspoon pure vanilla extract
13 - 2 tablespoons strong brewed coffee, cooled

→ Glaze (optional)

14 - 1/2 cup powdered sugar
15 - 1 tablespoon strong brewed coffee

# Method:

01 - Set oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
02 - In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Add cold butter cubes and work in with a pastry cutter or fingers until the mixture forms coarse crumbs. Refrigerate until needed.
03 - In a small bowl, whisk flour, baking powder, and salt together. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy using an electric mixer. Add the egg, vanilla, and brewed coffee; blend until well incorporated.
04 - Gradually add the whisked dry ingredients to the creamed mixture, mixing just until combined. Avoid over-mixing for tender bars.
05 - Spread the bar base batter evenly into the prepared pan with a spatula.
06 - Sprinkle the chilled streusel evenly over the batter.
07 - Bake for 30 to 35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
08 - Allow bars to cool completely in the pan on a rack.
09 - Whisk powdered sugar and brewed coffee until smooth. Drizzle over the cooled bars if desired.
10 - Lift bars from the pan using parchment overhang and cut into 12 squares for serving.
