# Method:

01 - In a medium mixing bowl, combine turkey, grated cheddar, mayonnaise, Dijon mustard, diced red bell pepper, sliced spring onions, Cajun seasoning, smoked paprika, salt, and black pepper. Mix thoroughly until evenly incorporated.
02 - Lay out the bread slices and spread softened butter on one side of each slice.
03 - Place four bread slices, buttered-side down, on a cutting board. Distribute the turkey-cheddar mixture evenly over each slice, spreading to the edges.
04 - Cover each filled bread slice with a second slice, buttered-side up, to complete the sandwiches.
