05 - 1 small red bell pepper, finely diced
06 - 2 spring onions, finely sliced
07 - 1 1/2 teaspoons Cajun seasoning
08 - 1/2 teaspoon smoked paprika
09 - Salt and freshly ground black pepper, to taste

10 - 8 slices whole wheat or white sandwich bread
11 - 2 tablespoons unsalted butter, softened
# Method:
01 - In a medium mixing bowl, combine turkey, grated cheddar, mayonnaise, Dijon mustard, diced red bell pepper, sliced spring onions, Cajun seasoning, smoked paprika, salt, and black pepper. Mix thoroughly until evenly incorporated.
02 - Lay out the bread slices and spread softened butter on one side of each slice.
03 - Place four bread slices, buttered-side down, on a cutting board. Distribute the turkey-cheddar mixture evenly over each slice, spreading to the edges.
04 - Cover each filled bread slice with a second slice, buttered-side up, to complete the sandwiches.
05 - Preheat a large skillet or sandwich press over medium heat. Arrange the sandwiches in the pan, working in batches if necessary. Cook for 3 to 4 minutes per side, pressing gently, until golden brown and cheese is melted.
06 - Transfer sandwiches to a board, slice in halves or quarters as desired, and serve immediately.
